Don't be fooled by the healthiness of this next recipe! It's super yummy and you'll be plenty satisfied with all the wonderful variety and flavors. I wish I could claim this glorious recipe but it was originally created by the tastykitchen. I simply adapted it to fit our needs. I've been searching for recipes that my entire family can all eat right now because my husband is currently on a special Intense Cleanse similar to the Candida Cleanse. Not only can he not have wheat or dairy but a whole bunch of other foods as well! It basically boils dinner down to mostly veggies and meat. ;) (Which, don't get me wrong, are always great to have but I LOVE variety!) Be sure to see the recipe alterations for special diets. Picture from the Tastykitchen.com 3. In a large, deep skillet, heat olive oil over medium-high heat. Add garlic and saute for 1 minute. 4. Add 1/4 of the chicken broth, sun-dried tomatoes, and broccoli. Saute for 5 minutes. Add the peas, chicken, and remaining 3/4 cup of chicken broth. Shake about 1/4 cup parmesan cheese into the mixture (just enough to thicken the chicken broth). If using Nutritional Flakes, the sauce may not thicken fully. 5. Reduce heat to medium-low, cover, and simmer for 3 minutes. Serve mixture on top of spaghetti squash or combine all together. Garnish with more parmesan cheese. Special alterations:This recipe can be used on Dr. Nielsen's Candida Cleanse. Simply omit the cheese, and sub fresh tomatoes for the sun-dried.

This next great recipe is contributed by my husband. He was so sweet to make this craving wish for me the other night at 9:30 pm! Oh the joys of being pregnant... you can eat a 4th meal guilt free and convince your husband to make it for you... ;) I can't even describe to you how delicious this meal was! Being Gluten-Free can be frustrating to say the least but then factor in other things like dairy free or even grain free! It can start to feel limiting! This next recipe though, just might blow your taste buds! Before you dismiss this unlikely combination let me just say that is seriously now one of our new family FAVORITES! It's simply that good. Let's be honest though, I was as skeptical as you are about the no noodles things. I mean squash...seriously?! We've used spaghetti squash before served with spaghetti sauce but never in something like this... So, daring (and hungry), I pushed up my sleeves and got to work! I've made a couple of changes from the original recipe and frankly, I can't imagine the dish without them. I think you're going to LOVE this dish. Be sure to let us know what you think! :) Pad Thai with Spaghetti Squash(Gluten Free, Dairy Free, Grain Free, Contains Peanuts) Adapted by jalene from a recipe past through my mom ;) Makes 4 servings Ingredients:

Use some forks to shred the spaghetti squash. 3. Bake for about 45 minutes or until the "spaghetti" easily pulls away from the edge with a fork. Let the squash rest for 5 minutes and then "shred" the spaghetti with a fork. Set aside. 4. In a large nonstick skillet or wok over medium high, saute the garlic, carrots, and cabbage for
3 minutes. Remove from pan and set aside. Add the chicken broth, peanut butter, soy sauce, rice vinegar, and hot sauce to the skillet. Heat until smooth and combined. Return veggies, chicken, and spaghetti squash to the pan. Toss until well coated and heated. Serve warm garnished with the chopped peanuts and green onions. Refrigerate leftovers in a covered container for up to 3 days. When you're feeling a little under the weather and nothing else sounds good this is one of those soups that just seems to make it all better. It's especially good on bitter cold days too! Oh my goodness, I'm in love with this next recipe. We seriously have had it 3 times already this month. There is this thai restaurant near us in American Fork, Utah that serves something similar to this dish. They called it Masaman Curry. It's AMAZING. So, of course I was determined to try and recreate it! This curry is not spicy and has a mild taste so it's a great beginner curry if any of you have been scared to try it before. If you're a fan of peanut butter-even better! The coconut milk and curry blend together blissfully. My favorite way to cook this is with a little bit of carrots, red pepper, chicken, and cashews but you can really change out any of the veggies. (Pictured is with potatoes instead of red pepper.) If you're anything like me...on those super warm summer days it's really hard to get up the desire to cook a hot dinner. Heating up the oven is the last thing I want to do! But this recipe is one of those mix it, leave it, and then love it recipes! It only has 3 ingredients and takes just a couple of minutes to throw everything in. Then stand back and let the crock-pot do the work while you play! I got this recipe from my sister-in-law Andrea and it's been an instant hit!
